To cook: Grill or fry in a lightly oiled pan until your chosen crispiness is achieved.

Stop doing this to me. My mouth is salivating. Look at all of that lovely fat, good old fashioned proper animal fat. Yup, saturated. The best fat indeed. Saturated fats are far stronger when heat is applied, they do not break down in the same way as vegetable oils, so if you're going to cook fat make sure its proper animal fat. This Guanciale bacon made from the jowly chaps of Mr Porker is heaven on earth and I don't do religion. Think about it, Mr Porker likes to eat, he's snuffling in the ground for grubs and roots, he's chomping and munching for most of the day. Finally his time comes, he becomes chops and joints, maybe a ham or two, some saussies in his own casings and a slab of back and flank for bacon. But what of that great muscle mass on his 'eed. The butcher's of the West Country roll it up and call it Bath Chaps, but FruitPig cure it and make it all the better for it. Be bold. Fry it, enjoy the flava seeping out of the fat. And keep the fat, it will be great for frying your black dag in. Why are you even reading this review, stop wasting time, just buy some jowly bacon
